Salted-Caramel Pecan Turtle Bar Recipe

Prep Time: 20 minutes
Cook Time: 35 minutes
Makes: 20 bars

Ingredients:

1 1/2 cup organic butter

1 2/3 cups organic all-purpose flour

1/2 cup organic cornstarch

3/4 cup organic powdered sugar

2 teaspoons pure vanilla extract

1 3/4 cups evaporated cane juice

1/4 cup agave nectar

1 teaspoon molasses

1 cup coconut milk

1 1/2 teaspoons very coarse sea salt

2 cups toasted organic pecan pieces

1/2 cup chocolate chips

1/4 cup filtered water

Directions:

1. Preheat oven to 350 degrees.

2. Lightly oil a 9 x 13 inch deep rectangular baking pan.

3. Beat 1 1/4 cups butter at medium speed for 30 seconds to remove any lumps.

4. Mix the flour, cornstarch, powdered sugar, and 1 teaspoon of the vanilla for 60 seconds until a smooth dough forms.

5. Press the dough into an even layer in the prepared baking pan.

6. Bake the crust for 20 minutes until lightly golden brown.

7. Combine the evaporated cane juice, agave nectar, molasses, the remaining 1/4 cup butter, and the remaining teaspoon of vanilla with 1/4 cup water in a tall pot.

8. Cook over medium heat, stirring occasionally, until the evaporated cane juice melts.

9. Once the mixture starts to bubble rapidly, stir in the coconut milk.

10. Cook for about 15 minutes until the caramel reaches a temperature of 240 degrees, then turn off the heat.

11. Immediately pour the hot caramel over the baked shortbread crust.

12. Sprinkle on the coarse sea salt, toasted pecans, and chocolate chips. Allow the caramel to melt the chocolate.

13. Allow the topping to cool to room temperature before cutting the tray of turtle bars.
