Salmon Cakes

Serves: 4
Ingredients:
4 ounces cooked salmon (preferably wild caught)
6 rice crackers
1/2 onion, minced
2 cloves garlic, minced
1 tablespoon fresh lemon juice
Dash of black pepper
Dash of coriander
1 tablespoon olive oil
Directions
1. Break salmon and rice crackers into small pieces
2. Mix all ingredients together
3. Create several small patties
4. Refrigerate for 1 hour
5. In a skillet, heat oil on high
6. Quickly brown both sides of each patty for 3 to 4 minutes
