As the days get shorter and temperatures get colder – enjoy this dish with loved ones on a beautiful fall day!


Quinoa Tabouleh Recipe

Prep Time: 5 minutes
Cooking Time: 35 minutes
Serves: 6


1 cup organic quinoa
2 ¼ cups water
1 organic cucumber
1 organic tomato
1 bunch mint
½ bunch parsley
2 tablespoons lemon juice
3 tablespoons extra virgin olive oil
sea salt to taste


1. Wash quinoa and add to boiling water with a pinch of sea salt.

2. Reduce heat to low and simmer covered for 20 minutes or until grains are fluffy and water is absorbed.

3. Fluff with a fork, cover and let sit for 10 minutes.

4. Prepare the vegetables while the quinoa is cooking.

5. Seed and dice the cucumber and tomato.

6. Mince the mint and parsley.

7. Transfer the quinoa into a large bowl and combine all ingredients.

8. Mix gently and taste, adjusting the lemon juice, olive oil and salt to your taste.
