Chocolate Haystack Recipe
Here’s a raw decadent dessert that’s quick and easy to make – it can be prepared minutes before guests arrive or several days in advance. Enjoy!
Prep Time: 15 Minutes
Cooling Time: 30 Minutes
2/3 cup raw organic cacao powder
1/2 cup maple syrup
1/4 cup coconut oil (glass jar), warmed to liquid
1/2 vanilla bean, scraped, or small pinch of vanilla powder
1/4 teaspoon sea salt (optional)
2 cups organic shredded coconut
1. Blend raw cacao powder, maple syrup, coconut oil, vanilla, and salt in a blender or food processor until smooth.
2. In a bowl, hand mix the shredded coconut with chocolate mixture.
3. Line a plate with parchment paper. Use a spoon or melon scoop to form twelve to fourteen individual haystacks on the parchment paper. Freeze for thirty minutes or until firm.
4. The haystacks can be stored in the refrigerator or freezer for one month.
