Basil Sun-Dried Tomato Spread Recipe
This raw colorful spread is quick and easy to prepare and can be used in a variety of ways. Basil Sun-Dried Tomato Spread
Soaking Time: 6 hours
Prep Time: 15 minutes
Yields: 2 cups
Ingredients:
For Basil Oil
2 cups packed organic basil
1 cup cold-pressed olive oil
For Basil Walnut- Cashew spread
2 cups raw organic cashews, soaked for six hours and drained
½ cup raw organic walnuts, soaked for six hours and drained
½ cup filtered water
2 tablespoons basil oil
2 cloves garlic
1 teaspoon organic lemon juice
A pinch of Himalayan salt and ground pepper (to taste)
For Basil Sun-Dried Tomato Spread
¼ cup organic sun-dried tomatoes, chopped
1 cup Basil Walnut-Cashew spread
Directions:
For Basil Oil
Place basil and oil in blender and blend until well combined, then strain.
For Basil Walnut-Cashew spread
Place all ingredients in food processor and process until well blended.
For Sun-Dried Tomato Spread
1. Stir chopped sun-dried tomatoes into spread.
2. Use as a dip or a topping on crackers or veggies.
